Another ramen craving night! I know Ramen Danbo has been opened quite a while already at the West 4th location in Kitsilano then we saw their second location of Danbo on Robson Street! Ramen Danbo is an authentic Japanese noodles bar specialized in traditional Fukuoka Tonkotsu Ramen with over 20 locations across Japan. We decided to hit Danbo after work. We came here around 7ish and so lucky that the queue was short. We got to sit down after only 15 minutes wait, not bad!
I like the idea that we can customize our own bowl of ramen, different levels of noodle firmness, thickness of broth, amount of lard and amount of spicy sauce.
The menu has a selection of ramen toppings: extra chashu, nori (seaweed), karashi takana (pickled Japanese mustard greens), soft boiled egg and kikurage (cloud ear mushroom). Hubby was excited to see karashi takana is available here! It is very common in Japan and usually it is free in most of the ramen joints there. Too bad it is not free here.
Negi-goma Tonkotsu Ramen @ $11.45

Ramen for myself. The noodles was artisan crafted thin noodles. It was okay but it was not the thick and chewy egg noodles I like. The tonkotsu broth was extremely flavorful and creamy with rich taste and aroma of pork bones and sesames. The soup base was very delicious. The egg was boiled perfectly and the york was very creamy. Meat quality was so so, a lil bit dry. I did not like this texture. If you like spicy sauce in noodles, must try their own recipe of spicy tare sauce. I picked standard level and it was good to bring out the flavors of the soup.

Hubby picked the classic signature with "Kaedama" (extra noodles), $2 for full order. Half order is available for $1. Hubby also added the picked Japanese mustard greens to the bowl of noodles too.
Mentaiko Rice @ $3.50
Topped with spicy cod roe, famous in Fukuoka
Can skip this.
We will come back to try more addition toppings with different ramen customized combo next time!
